Word of the Day Sourdough

Made sourdough bread today. This is the second loaf. I like it. Could have cooked it about 5 more minutes I believe. Used the starter that was made 4 days ago using yeast that had an expiration date of 2018. This is very fascinating. Takes most of the day to create it. Forgot to slice the top. It did not bust out, just cracked a bit on the top. Used 2/3 whole wheat flour and 1/3 bread flour. The bread flour is 14.1% protein. I did not realize that flour had that much protein. Using a cast iron oval shaped dutch oven. Learning about this from UTube.
